Cozumel Restaurant: 4200 Hwy. 62/412, Hardy. Date of inspection: March 3, 11 a.m. Corrective action needed: Microwave in kitchen needs cleaning. Employee grabbed tamale with bare hand and placed on plate. Provide paper towels at hand sink in kitchen. Replace blade in can opener -- metal shavings can contaminate food. Continue to work on proper labeling -- some items incorrectly labeled or lacking labels. Repair dishwasher to properly pull dish trays automatically and to sanitize dishes with water of at least 180 degrees F -- repeat. Keep hand sink in wait station accessible -- repeat. Home canned "Lime Pickles" are not approved for food service and should be removed from facility.

Store wiping cloths in sanitizer equal to 50-100 ppm bleach. Pizza should be held at 135 degrees F or above or labeled with time of prep and thrown away after 4 hours. Store M&Ms, Snickers, etc., off floor of kitchen a minimum of 6 inches. Employee drinks are required to have lids and straws. Store ice scoop handle up in ice or on sanitized surface. Single service items (styrofoam cups, napkins, etc.) should be stored off floor of store room. Inside of slush machine and inside spout will need cleaning prior to use.
